In spring 2025, The Knickerbocker expanded its culinary offerings with the debut of Akoya, a rooftop sushi bar that has quickly made a name for itself among New York’s most discerning diners. A collaboration between Charlie Palmer and celebrated sushi chef Taishi Yamaguchi, Akoya offers elegantly crafted temaki-style rolls and standout dishes such as Yuzu-Cured Scallop, Australian Wagyu Tataki, and the signature Akoya Grilled Oyster.
